"Thai"ed one on again!
Thai Chicken Red Curry is one of my favorite dishes at our local Thai dining place.
Here is my recipe.
2 can coconut milk
2 tablespoons red curry paste
1 tablespoon brown sugar
1 can bamboo shoots drained
1 large red bell pepper sliced
2 tomatoes cut into wedges
1 cup fresh basil leaves
red pepper flakes to taste
cooked chicken removed from bone
steamed rice
Bring first 8 ingredients to a boil. Reduce heat and let simmer for 30 minutes. Add chicken until heated.
Serve with steamed rice.
You can substitute chicken with shrimp, beef, scallops or duck.
